HARVEST & WINEMAKING: Harvested on August 22, 2004. Fermentation occurred at temperatures ranging 66-85 degrees F. The cuvaison was 6 days total. Bled off 5% of free juice at de-stemming to concentrate flavors, colors and aromas. Fermented in small open top containers then punched down 3 times a day. Placed in barrels of 50% New American Oak & 50% 2 yr. old American Oak. Aged for 21 months.
