HARVEST & WINEMAKING: Harvested on September 20, 2005. Fermentation occurred at temperatures ranging from 62-86 degrees F. The cuvaison was 8 days total. Fermented in small open top containers then punched down 3 times a day. Placed in barrels of 60% New French Oak & 40% 2 yr. old French Oak. Aged for 21 months.
